    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Dirty Dave's Unburger
    Categories: Five, Beef, Cheese, Sandwiches
    Yield: 1 Sandwich

    1/2 lb Ground chuck
    1 sl Round Colby or Longhorn
    - cheese 3/16" thick
    Salt & pepper
    1 6" seeded bun; toasted

    Hand form two burger patties from the chuck. Place the
    cheese on top of a patty and cover with second patty.
    Crimp edges together to form one nice sized hamburger
    patty.

    Cook on/in very hot griddle/skillet for 90 seconds on
    first side, flip and cook on other side until melted
    cheese begins to ooze from the meat. Season with salt
    and pepper.

    Place on toasted bun and top with whatever condiments
    you desire.

    Title: Dirty Dave's Avocado-Smash Burger
    Categories: Beef, Pork, Vegetables, Fruits, Herbs
    Yield: 2 Servings

    1 lb Ground chuck
    6 sl Thick-cut bacon; cooked
    - crisp
    1 tb Beef bouillon granules
    2 tb Chopped fresh cilantro
    +=OR=+
    2 ts Dried cilantro leaves
    1 Hass Avocado; thin sliced
    1/4 c Thin sliced red onion
    2 Egg rolls (buns)

    Combine ground beef, cilantro and bouillon in a large
    bowl; shape into 2 patties.

    Grill or broil to desired doneness. Serve on crusty egg
    rolls topped with bacon slices, avocado, and onion.

    NOTES: This is my own reconstruction of the Smashburger
    (R) Avocado Club Burger. I think Smash uses 1/3 lb pucks
    but I likes me beef. Tomato slices optional.

    Title: Bacon Double Cheeseburger
    Categories: Beef, Pork, Cheese
    Yield: 1 servings

    3 sl Bacon ends or thick-cut
    - bacon
    2 sl Pepper-Jack cheese
    1/4 lb Ground chuck patty
    Salt & pepper
    1 Hamburger bun; lightly
    - toasted
    2 sl Dill pickle
    2 sl Tomato
    1 Handful shredded lettuce
    2 sl White onion
    Mustard, ketchup, mayo

    Place the bacon in a saucepan with enough water to cover
    it. Bring to a boil and then reduce to a slow simmer for
    about 45 minutes, or until the bacon shreds easily.

    Meanwhile, form the ground beef chuck into a patty and
    season with salt and pepper. Reserve.

    Remove the bacon from the water and place a small pile
    on one side of a large frying pan. Use a flat metal
    spatula to press down on the bacon as it cooks, forming
    into a thin, flat, patty.

    Place the beef patty on the other side of the frying pan
    and score with the edge of the spatula.

    Flip both the beef and bacon patty over, cooking on both
    sides. Continue to press the bacon patty with the
    spatula to flatten it. Cook bacon until it is crisp on
    both sides and resembles a hashbrown. Cook the burger
    patty to desired doneness.

    Begin assembling the burger. Slather mustard and mayo on
    the bottom half of the bun. Stack onion rings on top of
    each other and drizzle with ketchup. Stack tomato slices
    and pickles on top of onions. Top with lettuce.

    Place a slice of cheese on the bacon patty and the
    hamburger patty. Place the top bun on the bacon and
    transfer the bacon patty on top of the beef patty. Lift
    the whole contraption off the grill and place on top of
    the bottom half of the burger.

    Wrap up the burger in some waxed or parchment paper and
    dig in!

    Title: Bacon Gouda Lucy Burger
    Categories: Beef. pork, Cheese, Breads, Vegetables
    Yield: 4 Servings

    4 (5 oz ea) ground sirloin
    - patties *
    4 sl Bacon; cooked, chopped,
    - divided
    1/4 lb Gouda cheese; diced
    1 md Red onion
    4 sl Yellow cheese
    4 Onion rolls
    4 lg Lettuce leaves

    Heat a charcoal or gas grill to medium heat. Divide each
    patty in half * & reshape each into a patty. On top of 4
    patties, put one-fourth of the chopped bacon and
    one-fourth of the diced Gouda cheese.

    * or start w/8 (3 oz. ea.) patties - UDD

    Top each with a second patty and press the sides together
    tightly. Grill until desired doneness.

    Slice onion and place on grill for 3 to 4 minutes until
    grill marks form, turning once.

    Top grilled burger with slice of cheese and grilled
    onions. Serve each on onion roll with lettuce leaf.

    Title: Beef & Pork Burgers
    Categories: Beef, Pork, Breads, Condiments
    Yield: 4 Servings

    9 oz Ground Beef
    9 oz Ground Pork
    1 lg Egg; optional
    1 1/2 tb Miso Paste
    1 tb Yellow mustard
    1 ts Garlic Powder
    1 ts Onion Powder
    1/4 ts Worcestershire Sauce; more
    - to taste

    In a bowl, combine the meats and the rest of the
    ingredients, mix well.

    Take around 1/2-3/4 cup of meat and shape it until its
    about 1cm (3/8") thick. Press an indent in the middle
    so that the burger keeps its shape and doesn’t curl up
    during the cooking process.

    Use small pieces of parchment paper between the burgers
    to stack them up until you ready to cook them.

    Let the patties rest for 30 minutes.

    In a cast iron pan, set the stove to medium heat and add
    a bit of oil. Wait until the pan is very hot. Add in the
    burger and let it sear for 1-2 minutes. Don't touch it
    or flip it!

    Add 1/4 cup of water to the pan and quickly put a lid
    over it and let it steam. Careful, the steam is hot! Let
    it cook for about 2 minutes, or until the water has
    evaporated away

    Remove the lid and flip the burger and let it cook for
    another 2 minutes to brown the other side.

    At this point, if you are adding cheese to your burger
    put it on now and put the lid over it for another 30
    seconds or until the cheese has melted.

    Serve it on a bun with some toppings and enjoy!!

    AUTHOR'S NOTES: Do not use extra lean pork. This will
    make the burgers very dry and tough.

    Makes 4 burgers
